System Preferences -> Sharing
Check FIle Sharing, select the folders to share (the VTrak disk on the Mac, for example)
Set the User and options.
Mount it at: smb://<Mac IP>
So I have it currently connected into a Mac. How would I go about sharing it over the network so that a Windows 2012 Server can connect to it?

The only way to do that is to connect it to a computer and use that to share it out on the network...
