The latest VTrak Ex10 compatibility list seems to be version 2.8.5 from Sep2014, which doesn't list any drives exceeding 4TB. Will larger SAS drives work with the 2.8 firmware? Anyone with experience about specific 5TB+ drives known to work, or specific 5TB+ drives to avoid?

No. The VTrak Ex10 units are tested only with 4TB drives SAS drives.
Since the unit has been moved to Legacy products list there will not be any further updates on Firmware or compatiblity list to support latest HDD's.
