I have an R8 where I was using 5 drive bays in Raid 5. I want to add another disk to the array but I can't seem to find a way without deleting all of my data. Does anyone know the way to go about this?

Hi Ken,
If you have a mac, it's possible but not easy. We have a KB about that.
You won't have to do any rebuild, start at the migrate step to add the disk to the array and expand the logical drive.
It's pretty easy to add the disk, but tricking macOS into using the larger LUN is the problem.
If you have Windows, it's easy. Do the migration to add the disk and you can expand the filesystem easily from the Disk Management snapon.
